Creamy Cilantro Lime Sauce

If you’re looking for a quick, easy and healthy sauce that’s bursting with fresh flavor, then give my creamy cilantro lime sauce a go.

Using a cashew base to achieve the creamy texture, fresh cilantro and lime juice help elevate the flavor profile of this sauce so it’s off the radar!

Best of all, it can be made in under two minutes in a high-speed blender and keeps for days in the fridge.

Why some people hate cilantro…

Did you know that there are actually people that hate cilantro? Apparently, it’s one of the most polarizing herbs on the planet. But if you know someone that hates it, their lack of good taste (ha ha!) might not be at fault.

In a genetic survey of nearly 30,000 people , researchers at Cornell University discovered that the OR6A2 gene is to blame for those that hate cilantro.

This gene “codes for the receptor that picks up the scent of aldehyde chemicals” – which are the very same chemicals that can be found in cilantro and soap, which is why many people who hate cilantro say it tastes soapy.

So, while we’ve clearly established that this sauce is not for the cilantro haters, it is for YOU if:

Creamy cilantro lime sauce

This sauce goes great with anything but I created it especially for my Black Bean and Corn Salad bowl (recipe coming soon!).

You could try spooning it on baked potatoes, nachos, buddha bowls or using it in place of sour cream and placing a good dollop in your bowl of soup. Basically, use this sauce wherever you could use a powerful cilantro flavor hit!

Creamy Cilantro Lime Sauce

Ingredients

  • 1 cup raw cashews
  • cup water
  • 1 lime juiced
  • 1 tsp taco seasoning store bought or use our recipe by clicking on the link
  • 1 garlic clove
  • 2 cups fresh cilantro

Instructions

  • Place all the ingredients except cilantro in a high-speed and blend on high for about 2
    minutes or until completely smooth.
  • Add the cilantro and blend for 20 seconds.
  • Use immediately or store in an air-tight container in the refrigerator for 4-5 days.
