Easy 6 ingredient hummus and avocado sandwich. A delicious sandwich made very quickly using hummus, tomato, sprouts, avocado, and grated carrots on a roll or wrap.

This one is going to be super quick today, but you’ll absolutely love it!

A 6 ingredient sandwich made with creamy hummus, fresh tomato, sliced avocado, grated carrot, and fresh sprouts all on a roll. Sounds good, right? It is! Especially if you can find some really nice bakery rolls to use for the sandwich. I’ve also made this on a wrap and it is still very good, but I prefer the roll or a nice loaf of fresh multi-grain bread.

If you don’t like sprouts (some people don’t I hear) substitute pea shoots, arugula, or lettuce.

I need to ask a favor of you, please. Please do not buy packaged carrot sticks for this! Buy a carrot, peel it, and run it over a box grater or whatever grater you have. It takes seconds to make and the freshly grated carrot taste will make all the difference in the world. Also, I want you to pile on that grated carrot on this sandwich. Like a big ol’ handful right on it… don’t be afraid!

I used store-bought hummus for this hummus and avocado sandwich because I was going for ease and simplicity. If you want to make your own hummus for this, go for it. It will be even better. My Baba Ghanoush recipe would be a delicious alternative to hummus for this sandwich if you prefer.

Ingredients

  • 1 roll or sandwich wrap
  • 1/2 avocado sliced
  • 2 tomato slices
  • 1 medium carrot peeled
  • a small handful of sprouts
  • 2 Tablespoons hummus

Instructions

  • Grate the carrot with a box grater
  • Assemble the sandwich- Spread hummus on both sides of the roll. Layer the remaining ingredients on the roll.
  • Cut the sandwich in half and enjoy!

Notes

Substitute pea shoots, arugula, or lettuce for the sprouts.
Can also be made on sliced bread or in a wrap.
