Vegan Taco Salad Bowl

In my previous blog post, I shared my recipe for vegan taco meat. Now here’s a great way to use that recipe – my vegan taco salad bowl.

What’s not to love about this meal? First of all there’s the vibrant colors that come from the gorgeous array of fresh vegetables; secondly everything in this bowl is made from scratch, even the smoky cajun sauce (get the recipe here)!

The combination of the crunch of fresh veggies, the outstanding seasoning from the taco meat and the smoky, creamy, spiciness of the cajun sauce will make this a sure favorite in any household.

It also makes a great midweek meal, especially if you’ve made up a big batch of the vegan taco meat and smoky cajun sauce in advance. All it takes is preparing the veggies and topping it off with a generous helping of taco meat and a good dollop of sauce.

My go-to ingredients for a vegan taco salad bowl are always black beans, corn kernels, avocado, and bell pepper. But feel free to mix it up with whatever veggies you have on hand or prefer.

Other ingredients that also work well are guacamole (use in place of the avocado), grated carrot and whole grain rice. A small handful of cilantro and some lime wedges would also make nice additions to the bowl.

When eating as a family, we love to put all the separate ingredients out in little bowls and then each person can build their own bowl as they want. Kids love the sense of independence and the ability to choose what’s going on their plate. Let me know if this works for you!

Ingredients

  • 1 recipe vegan taco meat
  • 1 15 ounce can black beans drained
  • 1 cup frozen corn kernels
  • 1 red bell pepper diced
  • 2 avocados peeled and chopped
  • 1 cup salsa
  • 6 green onions chopped
  • 1 head of iceberg lettuce shredded
  • 1/2 cup smoky cajun sauce optional

Instructions

  • Cook the frozen corn according to the package.
  • Assemble the bowls- place the shredded lettuce in the bottom of each bowl. Add the rest of the ingredients on top.
  • Drizzle with smoky cajun sauce (optional).
