Vegan Orange Bread

- 2 Cups dates chopped
- 1/2 Teaspoon baking soda
- 3 Tablespoons ground flax seeds
- 1.5 cups powdered sugar
- 1/2 Cup canola oil
- 2 Cups grated carrots
- 1/2 Cup chopped walnuts
- 2 Teaspoons vanilla extract
- Zest and juice of 1 orange
- 2 Cups all-purpose flour
- 1/2 Teaspoon ground cloves
- 1/2 Teaspoon ground cardamom
- 1 Orange sliced for top
Preheat the oven to 350°F.
In a bowl, soak the dates, baking soda, and ground flax seeds for a 1/2 hour.
Using an electric mixer, beat the powdered sugar and oil until well combined.
Add the soaked dates mixture, grated carrots, walnuts, vanilla extract, orange zest, and orange juice to the powered sugar mixture. Combine well.
Add the flour, cloves, and cardamom to the bowl and stir to combine.
Line a loaf pan with parchment paper. Pour the bread mixture into the loaf pan. Bake for 45 minutes.
After 45 minutes, add the orange slices to the top of the bread and bake for an additional 30 minutes or until a cake tester or toothpick inserted comes out clean
