The first of January is not only the start of a new year it’s also the beginning of Veganuary, a campaign designed to support people in trying vegan for the month of January and then staying vegan.
I know first-hand how transformative a campaign like Veganuary can be. I started out my own vegan journey with a challenge from my beautiful wife, Jen, to eat plant-based for a month. I didn’t know it at the time, but that decision to try vegan for just 30 days was going to change my life.
I guess the hardest part of going vegan for most people is figuring out what you’re going to eat. The good news is that plant-based eating is as simple and quick as you want it to be, but most importantly, it’s delicious. You don’t have to use any weird ingredients (not unless you want to, of course) or spend lots of extra time cooking.
To help anyone that is trying vegan this January, we’ve put together this awesome list of 31 vegan “no fuss” but tasty meal ideas. That’s one new recipe a day.
So although the idea of being vegan can seem daunting when you’re just starting out, just take it one bite at a time and you’ll be amazed to discover that that’s all it takes to make a difference – to your health, to the animals and to our environment!
