Pancake day is coming! So if you’re going to join in on the fun, you need to have a go-to easy vegan pancakes recipe! Might I suggest that you borrow mine?
Most people think you can’t achieve the light, fluffiness of traditional pancakes without the use of eggs. Well, lucky for us, they’re wrong!
This vegan version uses flax seeds mixed with water to create a “flax-egg”. It’s a really common and extremely effective egg replacer in vegan baking.
But if you’re already a seasoned vegan baker, then forgive me, you probably already know this – I’m teaching grandma to suck vegan eggs!
We take these pancakes to the next level by adding in sliced bananas, which go all lovely, sweet and caramelized. Top it all off with drizzled maple syrup and you’ll have a stack of pancakes to be proud of!
Other topping ideas include: fresh berries and whipped coconut cream, plain old peanut butter and jelly (an oldie but a goodie), maple syrup and coconut bacon (this would be awesome with the bananas!) or a homemade vegan chocolate sauce!
Just in case you were wondering, Pancake day this year is on Tuesday the 5th of March. It’s a weekday, so go on, have pancakes for dinner! Your kids will think it’s fantastic!

Easy Vegan Pancakes with Bananas
Ingredients
Dry Ingredients:
- 1 Cup whole wheat flour
- 1 Cup spelt flour
- 3 Tbsp. baking powder
- 1 tsp. salt
Wet Ingredients:
- 2 Cups oat milk or soy milk
- 2 Tbsp. flax seeds
- 8 Tbsp. water
- 4 Tbsp. almond butter
- 2 Tbsp. fresh lemon juice
Fruit:
- 1-2 Bananas peeled and cut into slices
To cook:
- Canola oil or other neutral oil
Instructions
- Grind the flax seeds in a coffee grinder or mortar and pestle. Place in a small bowl and add the water. Stir and refrigerate for 10 minutes.
- Add all the dry ingredients together in a large bowl mix well with a spoon.
- Add all the wet ingredients together in a bowl and mix well with a whisk. add the flax mixture and whisk.
- Add the wet ingredients to the dry ingredients and stir lightly until just combined. Do not over-mix. Let the batter rest for 15 minutes.
- Heat a skillet over medium heat and add a bit of oil. When the oil is hot spoon some batter into the pan (you can make small pancakes or large ones, whichever you prefer.
- Add a few slices of banana to the uncooked top of the batter in the pan. Cook for a few minutes until you see bubbles on the surface of the batter. Flip each pancake over and cook for a few minutes more until done. Repeat until all the batter is finished.
- Serve banana slice side up and drizzle over maple syrup.
