Sticky, Gooey Vegan Brownies

This week’s vegan recipe in the spotlight comes from Jasmin from Ve Eat Cook Bake, who’s shared with us her recipe for sticky, gooey vegan brownies.
Vegan brownies are super easy to make at home without any high fructose syrup, sugar, or eggs. Instead, Jasmin’s recipe calls for dried dates, dark chocolate, cocoa powder, and nut butter, which gives you a healthy and addictive alternative to the classic American brownies.
Jasmin believes that classic brownies should be sticky and gooey, but not too gooey, and she prefers her brownies to be dense, moist and gooey – holding together well but not so gooey that they fall apart.
She’d been wondering for a long time how she could create a brownie recipe that’s not too sweet, but is still reminiscent of classic brownies.
And with this recipe she’s perfected it. This version with dates, nut butter and dark chocolate has become a staple in her household; wonderful if you like something sweet, but you don’t necessarily want to make an unhealthy choice.
Jasmin recommends using dark chocolate chips for her brownie recipe, which you can find in the baking department. Make sure they’re vegan by reading through the list of ingredients to confirm they don’t contain dairy products like butter fat, whey, or milk.
If you can’t find chocolate chips, you can easily cut your favorite chocolate into pieces.
