Caesar salad is an all time classic and if you thought it was off the menu for vegans, I’ve got good news for you my friends! You’re wrong! Use my vegan caesar dressing recipe and you’re back in business.
Did you know that Caesar salad was apparently created in Mexico?! The legend goes that Italian-American restaurateur Caesar Cardini invented the salad in his restaurant kitchen over the 4th of July weekend in 1924 in Tijuana, Mexico.
According to What’s Cooking America, the original salad contained “romaine, garlic, croutons, Parmesan cheese, boiled eggs, olive oil and Worcestershire sauce.” It was Cardini’s brother that later added anchovies to the salad in 1926.
Regardless of the various other components that make up the salad, let’s be honest and say it’s the dressing that really makes a Caesar salad one of the best.
In my Vegan Caesar dressing recipe, there’s no egg in sight and you won’t even have to go to the bother of putting together your own mayonnaise.
Shop-bought vegan mayo stands in to do the job and we give it a boost with the helping hands of a few key vegan ingredients that perfectly capture the distinctive flavor of a Caesar dressing.
Soy sauce gives the umami and saltiness you’d miss from any anchovies; nutritional yeast adds cheesiness that stands in for the parmesan; Dijon mustard gives a hint of heat and color to the dressing, and fresh lemon juice contrasts with the nutritional yeast and creates a sharpness that hits the right spot on the taste palate.
