It’s summertime here in New York and the sun is shining! I don’t feel like spending hours in the kitchen creating a whole menu. I want to go to the beach, but first I have to prep dinner so I can come home and put a light and healthy dinner together in a snap. Sound like a plan, man?

This sauce can be made in 5 minutes and is perfect with grilled or roasted veggies. Make a double batch and have it for lunch for a couple of days too… maybe in wrap or salad with leftover grilled veg… why not?!

Ingredients

  • 1 cup plain coconut yogurt
  • 1/2 cucumber peeled, seeded, and diced
  • 1 Tablespoon green onions chopped
  • 1 Tablespoon extra virgin olive oil
  • 1/8 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • dash of Tabasco sauce

Instructions

  • Combine all ingredients in a small bowl. stir and adjust seasoning.
  • Store in a mason jar or other container. Refrigerate until needed.
