So if you’re looking for vegan rice and beans inspiration, you’ve come to the right place. My Vegan Rice and Beans recipe is protein packed and super tasty and comes together quickly to make a great weeknight meal.
According to Medical News Today, beans are an affordable source of protein, fiber, and vitamins that offer many health benefits.
Some of these benefits include being high in antioxidants, which help to fight free radicals (reducing the risk of inflammation and cancer), reducing the risk of a heart attack or stroke, lowering cholesterol and stabilizing blood glucose levels to help prevent diabetes.
Sounds pretty good, huh?
In my Vegan Rice and Beans recipe, I’ve added celery for extra flavor and sweet potatoes for extra nutrients and a sweetness that really complements the array of spices added.
If you like your beans spicy, you could also add a pinch or more of cayenne pepper. Or if you’re cooking for different tastes, we like to serve up our vegan rice and beans with a hot sauce on the side.
Feel free to garnish with a big handful of chopped cilantro as well!

Vegan Rice and Beans
Ingredients
Rice
- 2 cups white rice
Beans
- 1 tbsp olive oil
- 2 cups onion diced
- 1 cup red bell pepper diced
- 1.5 cups sweet potato peeled and diced
- 2 stalks celery diced
- 5 cloves garlic minced
- ½ tsp dried oregano
- 2 tsp ground coriander
- 2 tsp ground cumin
- 2 tsp paprika
- 2 tsp cracked black pepper
- 1 tbsp kosher salt
- 1 cup tomato sauce
- 1 large can pink beans (1 lb. 13 oz.)
Instructions
- Cook the rice according to the package.
- In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, celery, and sweet potato. Sauce for 3 minutes stirring often. Add the garlic and saute for 2 more minutes.
- Add the rest of the ingredients (including the liquid in the can of beans) and bring to a boil. Reduce to a simmer and cook for an additional 15 minutes. Stirring often.
- Serve over hot white or brown rice and serve with hot sauce on the side.
