What’s next… Well, we do consulting work. Jen does dietary, health, and well-being consulting for people who need help with a whole foods, plant-based diet. Kevin does vegan hospitality consulting for restaurants, hotels, and other businesses. First, let’s get to know more about Jen and Kevin before we talk about consulting.
Jen Schmidt

Jennifer is a Registered Nurse with a Certificate in Plant-Based Nutrition from e-Cornell and the T. Colin Campbell Center for Nutrition Studies. She is the Health & Wellbeing Editor for One Bite Vegan Magazine.
Working as a nurse on a medical-surgical unit has allowed her to see, firsthand, the devastating effects of chronic disease on the human body- the pain, the adverse effects of medications, the lives interrupted, the tears, the unhappiness, the despair, death, and loss of quality of life.
While there is certainly a need for the mainstream medical system and the lifesaving work done there, for the chronically ill, we are often just slapping a bandaid over their symptoms of disease and sending them out the door with more medications, only for them to return some time later, often time and time again, without ever addressing the root cause.
Diet.
The answer is in the foods we choose to put into our bodies at every meal. Vegetables, fruit, whole grains, and legumes have incredible powers in building, protecting, and healing the human body. This is the real medicine we should be utilizing and educating everyone on to stop disease in its tracks, reverse the progression, cure by addressing the root cause, and prevent it from ever even existing.
Jennifer quickly realized that this is how she would choose to do her work as a nurse, educating people on how to be successful in transitioning to a whole food plant-based lifestyle. Everyone deserves a life free from suffering and disease. Through the content created for One Bite Vegan magazine and one-on-one Whole Food Plant-Based Diet Consulting, Jennifer is able to live out her passion in educating others on the innumerable benefits of this lifestyle for personal health, the future of our planet, and compassion for our fellow beings.
Kevin Schmidt

Kevin is a Vegan Hospitality Consultant, Professionally Trained Chef, Vegan Food Blogger, and Magazine Publisher. He provides services in plant-based menu development, interactive employee training, marketing, and Vegan Service Certification. Kevin is passionate about working with restaurants, hotels, and businesses to bring sustainability, transparency, and inclusivity to the forefront of the guest experience and increase positive customer feedback and sales.
Kevin lives in East Quogue, New York. He cares deeply about where food comes from, the impact it has on the environment, and the inclusive guest experience through the story of ingredients and causes. He is a professionally trained chef with a Culinary Arts degree from Johnson & Wales University.
Kevin publishes the One Bite Vegan Magazine, blogs on OneBiteVegan.com. His Culinary Arts degree, extensive hotel and restaurant background, and vegan influencer work have clearly led him toward his mission to help the Hospitality Industry transition into the next era of guest services to meet the increasing demand for plant-based cuisine.
So, as you can see we’re like a dream team or maybe even Superheroes powered by plants, coffee, and wine! 😉 No really, we care a lot about what we do, the people we work with, and the vegan community. Jen is the health and wellbeing editor for the blog and magazine. On the health and wellbeing blog, you will find info on nutrition education, holistic wellness, and tips on making a whole food plant-based diet blend seamlessly into your lifestyle. Now that you’ve got to know us personally a little better, you might be wondering where the name One Bite Vegan came from. It’s very important to us and who we are and what we’re all about. Here’s the philosophy behind the name-
One bite.
One bite is all it takes to make a change.
Much of the food we choose to eat today is destroying our health and vitality. By consuming animal products, we are creating and fueling disease within us that is causing our own suffering and shortening our lifespan.
One bite is all it takes to make a change.
Much of the food we choose to eat today is destroying our planet. By consuming animal products, we are annihilating rainforests, ravaging our oceans, and ignoring the greatest contributor to global warming. We are supporting an unsustainable food system which neglects hungry masses and denies future generations a world free from environmental devastation.
One bite is all it takes to make a change.
Above all, much of the food we choose to eat today is causing incomprehensible suffering to the sentient beings who share this earth with us. By consuming animal products, we are turning a blind eye to the atrocities that are being inflicted upon innocent animals every day across the globe.
One bite is all it takes to make a change.
Our mission is to do our part to spread this message. As intelligent and compassionate beings, we are all capable of affecting change once we make the connection. What we have been eating is wrong. It is wrong for our health, wrong for the planet, and wrong for the animals.
By simply making a different choice about what goes onto our plate, we can say no to these wrongs and begin to make them right. Each and every person makes a difference. One bite is all it takes to become vegan and make a change.
We are passionate about sharing the why and the how.
