Ingredients

  • 1 15 ounce can black beans drained
  • 1 16 ounce bag frozen corn kernels
  • ½ red onion diced
  • 1 avocado peeled and chopped
  • 2 tomatoes diced
  • 1 lime juiced
  • salt & pepper to taste
  • 1 head romaine lettuce chopped
  • ½ cup Creamy Cilantro Lime Sauce optional

Instructions

  • Cook the frozen corn according to the package.
  • In a large bowl, mix together the black beans, cooked corn kernels, red onion, avocado, tomatoes, lime juice, salt, and pepper. Taste and adjust seasoning.
  • Assemble the bowls- place the chopped lettuce in the bottom of each bowl. Add the black bean and corn mixture on top.
  • Drizzle with Creamy Cilantro Sauce.
