Ingredients

  • 2 cups cauliflower chopped
  • 2 cups carrot grated
  • 1 cup walnuts
  • 1 tbsp olive oil

Taco seasoning

  • 1 tbsp chili powder
  • 1+1/2 tsp cumin
  • 1 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/4 tsp onion powder
  • 1 tsp oregano

Instructions

  • Preheat oven to 400°F
  • Pulse all ingredients in a food processor until you have a coarse mixture resembling taco meat.
  • Spread mixture onto a parchment lined sheet pan.
  • Bake in the oven for 20-25 minutes.
