- 2 cups cauliflower chopped
- 2 cups carrot grated
- 1 cup walnuts
- 1 tbsp olive oil
Taco seasoning
- 1 tbsp chili powder
- 1+1/2 tsp cumin
- 1 tsp garlic powder
- 1/4 tsp smoked paprika
- 1 tsp kosher salt
- 1/4 tsp onion powder
- 1 tsp oregano
Preheat oven to 400°F
Pulse all ingredients in a food processor until you have a coarse mixture resembling taco meat.
Spread mixture onto a parchment lined sheet pan.
Bake in the oven for 20-25 minutes.
