Beans
- 1 tbsp olive oil
- 2 cups onion diced
- 1 cup red bell pepper diced
- 1.5 cups sweet potato peeled and diced
- 2 stalks celery diced
- 5 cloves garlic minced
- ½ tsp dried oregano
- 2 tsp ground coriander
- 2 tsp ground cumin
- 2 tsp paprika
- 2 tsp cracked black pepper
- 1 tbsp kosher salt
- 1 cup tomato sauce
- 1 large can pink beans (1 lb. 13 oz.)
Cook the rice according to the package.
In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, celery, and sweet potato. Sauce for 3 minutes stirring often. Add the garlic and saute for 2 more minutes.
Add the rest of the ingredients (including the liquid in the can of beans) and bring to a boil. Reduce to a simmer and cook for an additional 15 minutes. Stirring often.
Serve over hot white or brown rice and serve with hot sauce on the side.
