Ingredients

Rice

  • 2 cups white rice

Beans

  • 1 tbsp olive oil
  • 2 cups onion diced
  • 1 cup red bell pepper diced
  • 1.5 cups sweet potato peeled and diced
  • 2 stalks celery diced
  • 5 cloves garlic minced
  • ½ tsp dried oregano
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 2 tsp cracked black pepper
  • 1 tbsp kosher salt
  • 1 cup tomato sauce
  • 1 large can pink beans (1 lb. 13 oz.)

Instructions

  • Cook the rice according to the package.
  • In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, celery, and sweet potato. Sauce for 3 minutes stirring often. Add the garlic and saute for 2 more minutes.
  • Add the rest of the ingredients (including the liquid in the can of beans) and bring to a boil. Reduce to a simmer and cook for an additional 15 minutes. Stirring often.
  • Serve over hot white or brown rice and serve with hot sauce on the side.
