Potatoes
- 3 pounds yukon gold or new potatoes quartered
- 4 stalks celery diced
- 1 cup red onion¼ diced
- 4 green onions chopped
Dressing
- 1 cup raw cashews
- 2 tbsp Dijon mustard
- 1 tsp soy sauce
- 2 tbsp red wine vinegar
- 2 garlic cloves
- 2 tbsp nutritional yeast
- 1 tsp salt
- 1 tsp black pepper
- ¼ tsp dried dill
- ½ cup water
- juice of half a lemon
Make the salad
Place the cooked potatoes in a large bowl. Add the celery, onion, and green onions.
Pour the dressing over the potatoes and mix together. Check the seasoning and adjust with salt and pepper. Store in the refrigerator until ready to eat.
