Potatoes
- 3 pounds yukon gold or new potatoes quartered
- 4 stalks celery diced
- 1 cup red onion¼ diced
- 4 green onions chopped
Dressing
- 1 cup raw cashews
- 2 tbsp Dijon mustard
- 1 tsp soy sauce
- 2 tbsp red wine vinegar
- 2 garlic cloves
- 2 tbsp nutritional yeast
- 1 tsp salt
- 1 tsp black pepper
- ¼ tsp dried dill
- ½ cup water
- juice of half a lemon
Make the salad
- Place the cooked potatoes in a large bowl. Add the celery, onion, and green onions.  
- Pour the dressing over the potatoes and mix together. Check the seasoning and adjust with salt and pepper. Store in the refrigerator until ready to eat.
