Just when you thought you couldn’t top the satisfaction of the perfect roasted potato (crispy golden skin on the outside, soft and fluffy on the inside) – roasted potatoes got an upgrade with an amazing post-roasting gremolata topping!

Even though gremolata sounds really fancy, it couldn’t be more simple. An Italian word, gremolata is a dressing or garnish made with a few simple ingredients such as lemon, garlic and parsley.
In Italian cuisine it’s often served as an accompaniment to meat or fish, but traditionally it’s been served with ossobuco alla milanese.
But don’t you think that’s the beauty of cooking? We can take a delicious element out of a recipe and pair it up with something else! And in this case the gremolata works so well with the roasted potatoes you’d never believe that it was originally paired with anything else.

Roasted Potatoes Gremolata
Ingredients
Potatoes
- 2 pounds Yukon Gold or new potatoes quartered
- 2 tbsp olive oil
- salt & pepper to taste
Gremolata
- ¼ cup fresh parsley chopped
- 2 cloves garlic minced
- 1 lemon zest & juice
- 2 tbsp extra virgin olive oil
- salt & pepper to taste
Instructions
- Preheat the oven to 375°F.
- Quarter the potatoes (or cut into bite size pieces if using a larger potato) and place in a large mixing bowl.
- Add the olive oil, salt, and pepper to the bowl. Toss well to evenly coat the potatoes.
- Dump the potatoes on a parchment lined sheet pan and roast in the oven for 40 minutes to 1 hour or until tender on the inside and crispy on the outside.
- Mix all the ingredients for the gremolata in a large bowl. Transfer the roasted potatoes to the bowl and toss with the gremolata. Serve immediately.
