Jump to RecipeI’m not exactly sure what the rules are for a tostada but I didn’t know what else to call this. Mexican pizza? open-faced taco? Freeform burrito? Nah… I don’t like any of those so let’s just stick with a vegan tostada.
Fist step was to make the jackfruit. I used a canned jackfruit I got from Nature’s Charm. You can find it here- Vegan Jackfruit. Drain the jackfruit and then rinse with cold water. Squeeze the excess moisture from the jackfruit while you break it apart with your hands. Alternatively, you can cut up the jackfruit with a knife but I find it easier to just pull it apart with your hands. The texture is better this way too.
Heat up a small pan with a lid and place the jackfruit and taco seasoning (recipe below) with a 1/2 cup of water in the pan. Bring to a boil and then simmer for about 15-20 minutes.
Next step is to make the vegan cheese sauce. Here is the recipe- Vegan Cashew Cheese Sauce. To save time use canned pumpkin in place of the butternut squash. It is still really delicious and you can make the sauce in a snap.
Next- get all your veggies prepped and preheat the oven to 425°F. On a flour or corn tortilla, spread salsa over it and drizzle with the cheese sauce. Scatter some jackfruit over the top and bake in an oven for about 5 minutes or until the tortilla is crispy.
Top the cooked tostada with avocado, fresh diced tomatoes, diced red onion, shredded lettuce, fresh cilantro, and more cheese sauce. Cut into wedges and enjoy!
Vegan Tostada with Jackfruit, Avocado, Salsa, and Cheezy Sauce
Ingredients
- 20 oz. can of jackfruit
- 1 recipe taco seasoning recipe below
- 1/2 cup water
- 1 cup salsa
- 1 cup vegan cheese sauce
- 4 tortillas
- 2 avocados peeled and diced
- 2 tomatoes diced
- 1/2 red onion diced
- 3 cups shredded iceberg lettuce
- few sprigs of fresh cilantro
Instructions
- Preheat the oven to 425°F
- Drain and rinse the jackfruit with cold water. Squeeze out the excess moisture and shred with your hands.
- In a small pan with a lid, place the jackfruit, taco seasoning, and 1/2 cup water. Bring to a boil, cover and simmer for about 15-20 minutes.
- Layout your tortillas on sheet pans. Spread salsa over the top of each. Drizzle the cheese sauce and scatter the jackfruit over.
- Bake in the oven for about 5 minutes or until the tortillas are crispy.
- Top the cooked tostadas with avocados, tomatoes, red onion, cilantro, and shredded lettuce.
- Drizzle over more cheese sauce. Cut into wedges and serve.

Ingredients
- 1 Tablespoon chili powder
- 1 1/2 teaspoon cumin
- 1 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1/4 teaspoon onion powder
- 1 teaspoon dried oregano
Instructions
- Combine all ingredients and mix well.
- Store in an airtight container.
