Vegan Green Bean Casserole

Vegan green bean casserole. Green beans tossed with sauteed mushrooms, onions, and vegan mushroom gravy. Topped with french fried onions and baked in the oven until crispy. Perfect side dish for a vegan Thanksgiving.

Ingredients

  • 24 ounces of frozen or fresh green beans
  • 2 cups mushrooms sliced
  • 1 medium-sized onion chopped
  • 1 Tablespoon olive oil
  • 2 cups vegan mushroom gravy
  • 2 cups packaged french fried onions

Instructions

  • Preheat oven to 375°F.
  • Blanch your green beans in boiling water for 2-3 minutes and then shock in an ice bath.
  • In a large skillet, saute the onions and mushrooms in olive oil until soft. Approximately 5 minutes.
  • Add the vegan mushroom gravy to the pan and heat through. Turn off the heat.
  • Place the green beans in a casserole dish and pour over the gravy mixture. Add in half of the french fried onions and mix together.
  • Top with the rest of the french fried onions and bake for 20 minutes.
