Roasted Cauliflower and Grapes with Jasmine Rice

- 2 Cups jasmine rice
- 3 cups seedless red or green grapes
- 1 head cauliflower separated into florets
- 3 Tbsp. olive oil
- salt and pepper to taste
Garnish:
- 1/2 Cup almonds lightly toasted in the oven or pan
- extra virgin olive oil or vegan butter
Preheat the oven to 425°F
Cook the jasmine rice according to the package.
Toss the grapes and cauliflower in olive, salt, and pepper. Spread out onto a parchment lined sheet pan. Roast in the oven for 20 minutes.
Scoop some rice into a bowl or plate. Spoon the cauliflower and grapes over the rice. Drizzle with extra virgin olive oil or vegan butter.
Sprinkle the toasted almonds over top of each bowl. Serve immediately.
