Roasted Cauliflower and Grapes with Jasmine Rice

Do you know what I love the most about cooking? It’s the creativity that you get to bring to every dish. Experimenting with different ingredient combinations is a great way to exercise our creativity and develop our palates.

So, with that in mind, I’ve been doing some of my own experimenting with roasting grapes, because, why not?

While roasted grapes have been a thing for a while, I thought about combining them with cauliflower to make them part of a main meal rather than an accompaniment to cheese.

Turns out the nuttiness of the roasted cauliflower pairs extremely well with the enhanced sweetness and bite of the roasted grapes, and it’s these sort of discoveries that keep me psyched about being in the kitchen.

Take my miso vodka pasta sauce for example. Who knew that miso and vodka would work so well together? I didn’t until I tried it.

This recipe is really simple to make and served up with a side of Jasmine rice, it can be on your plate in around half an hour.

Roasted Cauliflower and Grapes with Jasmine Rice

Get experimental in the kitchen with this roasted cauliflower and grape recipe, served up with a side of fragrant jasmine rice.

Ingredients

  • 2 Cups jasmine rice
  • 3 cups seedless red or green grapes
  • 1 head cauliflower separated into florets
  • 3 Tbsp. olive oil
  • salt and pepper to taste

Garnish:

  • 1/2 Cup almonds lightly toasted in the oven or pan
  • extra virgin olive oil or vegan butter

Instructions

  • Preheat the oven to 425°F
  • Cook the jasmine rice according to the package.
  • Toss the grapes and cauliflower in olive, salt, and pepper. Spread out onto a parchment lined sheet pan. Roast in the oven for 20 minutes.
  • Scoop some rice into a bowl or plate. Spoon the cauliflower and grapes over the rice. Drizzle with extra virgin olive oil or vegan butter.
  • Sprinkle the toasted almonds over top of each bowl. Serve immediately.
