If you haven’t tried blood oranges before, keep a lookout for them next time you’re on the hunt for produce. According to the National Gardening Association, blood oranges have a taste similar to a cross between an orange and a raspberry.
They’re a natural mutation of a sweet orange and they have a distinct ‘blood’ color on the inside thanks their high levels of anthocyanin pigment.
Anthocyanins don’t just provide a pretty color, they also help fight off free radicals and inflammation. As you’d also expect, blood oranges are a great source of vitamin C, A, folic acid and calcium.
If you can’t find blood oranges in your area, you can of course use standard oranges but the taste and look of the sauce will be slightly altered.
The other key ingredient in this recipe is of course, cashews. You should soak your cashews overnight or for around four hours if you don’t have a high-speed blender.
That adds some time to wait, however, if you haven’t got time to soak, try blending the cashews first with boiling water instead of cold, then once it’s creamy and cooled down, then add in your blood orange juice and zest (you don’t want to add in the blood oranges along with the boiling water as it will change the flavor and destroy some of the nutritional value).
I’ve got a great recipe coming up for you that uses this blood orange cashew cream sauce so keep a look out for it!
