Recipe Alert! Spicy Thai Soup with Soy Curls

Love Thai food? Us too! And we especially love this Spicy Thai Soup with Soy Curls recipe that’s been created by the talented Lori from My Quiet Kitchen.

It’s been inspired by Tom Yum Hot and Sour Thai soup, and this simplified vegan version is made with easy-to-find ingredients. It uses soy curls for meatiness and protein (you can easily sub this for tofu if you want), and includes all the best ingredients to recreate those spicy Thai flavors at home – ginger, garlic, lemongrass, mushrooms and red curry paste.

While this spicy Tom Yum-inspired soup recipe isn’t authentic, it does manage to capture the vibe. The main perks of this soup are that it uses accessible ingredients, comes together in 30 minutes, and is vegan, which is pretty much impossible to find in Thai restaurants.

For this recipe, Lori uses Butler Soy Curls, which are made from just one ingredient – whole, non-GMO soybeans, and they freeze well for extended storage. These make a really versatile addition to any meal as you can soak them in broth and add different flavors to them depending on this dish you’re creating.
