Are you looking for a sugar-free, dairy-free and vegan banana bread that’s healthy and delicious enough to devour for breakfast? You’ll love this breakfast worthy banana bread recipe from Alisa Flemming of GoDairyFree.org.
Straight out of Alisa’s brand new recipe book, Go Dairy Free (Second Edition), this healthy banana bread recipe is free of added sugars (the recipe does include a modestly sweetened option if you prefer), and is perfect for toasting.
Lightly sweetened by the bananas, Alisa says this bread goes best in the mornings slathered with your favorite spreads. If you’re in a savory mood she suggests going with nut butter and cinnamon; or for a sweet treat, you can’t beat homemade chia jam.
This breakfast-worthy banana bread recipe calls for 2 cups of mashed banana to give the best banana flavor and a moist bread; however Alisa says you can reduce the measurement to 1.5 cups to allow the bread to rise more.
The great thing about this recipe is that it also lends itself well to being transformed into mini loaves. Alisa gives the full instructions on how to do that as well.
For those who now and again have a sweeter tooth, Alisa gives instructions on how to add in sweetener and also has directions on how to use gluten free flours to make this a sugar-free, dairy-free AND gluten-free banana loaf – so no one has to miss out!
