Eggplant Cacciatore

I don’t know anyone that doesn’t like pasta and if you’re looking for another pasta dish to add to your repertoire, then look no further than my recipe for Eggplant Cacciatore.

Funnily enough, cacciatore means ‘hunter’ in Italian. And according to Wikipedia, in cuisine, alla cacciatora refers to a meal prepared “hunter-style” with onions and herbs, usually tomatoes, often bell peppers , and sometimes wine.

Vegetables

A traditional cacciatore dish will be cooked with chicken or rabbit but I can guarantee you that no chicken or rabbit was hurt in the making of my dish!

Eggplant stands in for the ‘meaty’ element of the cacciatore and in addition to adding bite, it also soaks up all the gorgeous quintessential Italian flavors.

This dish looks impressive but it’s a cinch to make and can be ready in around 30 minutes.

Eggplant Cacciatore

Succulent and delicious, this eggplant pasta dish will become your go-to pasta recipe for those days when you need a quick, tasty and healthy meal.

Ingredients

  • 1 cup onions cut into strips
  • 1 cup bell pepper (any color) cut into strips
  • 1 cup mushrooms (any variety you prefer) sliced
  • 2 cloves garlic minced
  • 2 cups eggplant peeled and cut into 1/4 slices
  • 2 tbsp olive oil
  • Β½ cup red or white wine
  • ΒΌ tsp dried rosemary
  • 3 cups tomato basil sauce or jarred tomato sauce
  • salt & pepper to taste
  • 1 pound box pasta

Instructions

  • In a large skillet or pot, saute the onion, bell pepper, mushrooms, garlic, and eggplant in olive oil in batches.
  • Add the rosemary, wine, and tomato basil sauce, simmer for 15-20 minutes until all the vegetables are cooked.
  • Cook the pasta according to the package, spoon over the cacciatore and serve immediately.

Notes

Breaded and fried eggplant would work well with this dish too.

    Just ran across this recipe (looks great and easy, especially since I’m cooking a pot of fresh tomato sauce right now).

    What do you mean by “eggplant cut into 1/4 slices.” I’m thinking 1/4″ is way too thin and 1/4 of an eggplant is a very wide range.
